Description

Crispy and flavorful Garlic-Parmesan Oven Carrots, roasted to perfection with a hint of garlic and optional chili, topped with fresh parsley for a delicious side dish.


Ingredients

  • 600 g carrots, peeled and cut into sticks (or baby carrots)
  • 2 tbsp olive oil
  • 2-3 garlic cloves, chopped
  • 1/2 tsp garlic powder (optional)
  • 1/4 tsp chili flakes (optional for heat)
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish (optional)


Instructions

  1. Preheat oven to 200°C (390°F).
  2. In a large bowl, toss carrot sticks with olive oil, garlic, garlic powder, chili flakes, salt, and pepper.
  3. Spread carrots evenly on a baking sheet.
  4. Roast for 20–25 minutes, turning halfway through, until tender and lightly golden.
  5. Sprinkle Parmesan over carrots and roast for another 5 minutes until melted and golden.
  6. Garnish with fresh parsley and serve warm.

Notes

  • For a spicier version, increase chili flakes to taste.
  • Use freshly grated Parmesan for best flavor.
