Ingredients

  • 2 cups wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 tsp paprika powder (optional)
  • 3 large eggs
  • 1 cup natural or Greek yogurt
  • 1/2 cup sunflower or canola oil
  • 1 tsp vanilla extract
  • 1 cup fresh spinach, washed and roughly chopped
  • 1 cup crumbled feta
  • 1/2 cup grated cheese (e.g., Cheddar or Gouda)
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan or additional cheese
  • 2 tbsp melted butter


Instructions

  1. Preheat oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a large bowl, combine flour, baking powder, baking soda, salt, and paprika.
  3. In another bowl, whisk eggs, yogurt, oil, and vanilla extract until smooth.
  4. Fold wet ingredients into dry ingredients until just combined.
  5. Gently fold in spinach, feta, and grated cheese.
  6. Mix breadcrumbs with Parmesan and melted butter; sprinkle on top of each muffin.
  7. Bake for 20–25 minutes until golden and a toothpick comes out clean.
  8. Allow muffins to cool slightly before serving.
