Ingredients
- 2 cups wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1 tsp paprika powder (optional)
- 3 large eggs
- 1 cup natural or Greek yogurt
- 1/2 cup sunflower or canola oil
- 1 tsp vanilla extract
- 1 cup fresh spinach, washed and roughly chopped
- 1 cup crumbled feta
- 1/2 cup grated cheese (e.g., Cheddar or Gouda)
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan or additional cheese
- 2 tbsp melted butter
Instructions
- Preheat oven to 180°C (350°F) and line a muffin tin with paper liners.
- In a large bowl, combine flour, baking powder, baking soda, salt, and paprika.
- In another bowl, whisk eggs, yogurt, oil, and vanilla extract until smooth.
- Fold wet ingredients into dry ingredients until just combined.
- Gently fold in spinach, feta, and grated cheese.
- Mix breadcrumbs with Parmesan and melted butter; sprinkle on top of each muffin.
- Bake for 20–25 minutes until golden and a toothpick comes out clean.
- Allow muffins to cool slightly before serving.
Notes
- For extra crunch, toast the breadcrumbs before topping.
- Can be served warm or at room temperature.
