Description

Ingredients

  • 250 g butter, softened
  • 200 g sugar
  • 4 eggs
  • 300 g flour
  • 1 tsp baking powder
  • 1 pinch salt
  • 2 tsp lemon zest
  • 100 ml lemon juice
  • 2 tbsp powdered sugar (for glaze)


Instructions

  1. Preheat oven to 180°C (350°F) and grease a loaf or bundt pan.
  2. In a large bowl, cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Fold in flour, baking powder, salt, and lemon zest until combined.
  5. Pour batter into prepared pan and bake for 45–50 minutes, or until a toothpick inserted comes out clean.
  6. Let cake cool slightly, then drizzle with lemon juice mixed with powdered sugar to make a glaze.
